The last post!

Hey everyone! This is last post for dying4desserts for a long while. Enjoy licking the screens!!


Pinenut brittle semifreddo, chocolate mousse, salted caramel, chocolate tuilles and chocolate bubble wrap garnish

This dessert is just delicious!! Nuts, caramel, chocolate..everything I love in a dessert!!


Cold set cheesecake, gingerbread crumbs, mandarin jelly, strawberries and pomegranite

This deconstructed dessert is refreshing and very elegant.  It is a real cleanser after savouries. NOM NOM NOM!!


Pear souffle with cinnamon ice cream, backed pear and roasted hazelnut

Very hearty for winter, this dish was inspired by a Uraguayan man. He taught me to bake this pear with Port,      brown sugar, cinnamon and lemon. Delicious!!!! 


Pear and frangipane tartlets

Using the same pears, this delicious tartlet was served with cinnamon ice cream and chocolate foam. The moist almond mixed with the pear and crumbly pastry. *DROOL*


Coconut pannacotta, palm sugar tapioca, caramelised banana, sesame cashew praline and lychee sorbet

This dish is refreshing and a favourite of mine! Marrying the silky pannacotta with sweet banana and tangy lychee sorbet, this dish is full of flavour and textures. My mouth felt like it was at a party!!!


Passionfruit souffle, coconut sorbet and citrus salad

The whole dish was very refreshing for the taste buds. Tangy and sweet, it will always be a winner in my eyes!!

Thank you for supporting Dying4desserts blog. I have so much to share however have too little time to post everything. I will be travelling to Europe and eating my way around enjoying what every country has to offer. 
Pastry chef Jonathon Hing and Dominic Kim have taken over and continue making delicious desserts at CODA. So come by and try their creations!!! 

I will be back at CODA mid November, so hopefully I will have many European inspired desserts to share with you all.

The day before Winter!!!!!

Hi everyone! Just thought I'd share with you my latest desserts to salivate your taste buds. Working almost everyday of this month and an accident with my phone drowning in coconut sorbet mix has delayed such tasty treats for the eyes!

The feeling of Winter has crept up and I see a massive demand for people's favourite, such as the..


Sticky date pudding with vanilla butterscotch sauce and coffee ice cream

Finally choosing the perfected recipe, I have gained 2 kilos in the process. It is such a satisfying dish, I might have one when I get to work!


Set coconut tapioca with caramelised banana and jasmine ice cream

I'm sorry to see the banana fritters go, but welcome back the coconut tapioca!!! This smooth velvety spoonful (or should I say spoonfuls) is a beautiful cleanser at the end of the meal!! It is accompanied by the fragrant jasmine tea leaves infused ice cream and crunchy sesame cashew nut praline.


Prune and cognac creme brulee with walnut biscotti and fresh pomegranite

As a sweet special for the last 2 weeks, this creamy delight was delicious!! Many great comments were received and I'm sorry to see it go, but it has been replaced with something devine with chocolate and caramel (pictures to come..).


Lemon souffle with Coconut sorbet and meringue

This little tangy dish here is just a beautiful combination. It was inspired for my craving of lemon meringue pie! Coconut sorbet was my variation. It works well!!


Strawberries and cream macarons

Our supplier had given us a box of strawberries for free and then jam was created. I made vanilla macarons filled with strawberry buttercream, using the homemade jam. Yummy!!

2 big slabs were actually made for the sweet bites because it was just that damn good!

The last month of Autumn..

Hey guys! I hope you are all having a great day!!! This weather we are having is wicked..I shall soak up that sun as soon as I post this!!!

In the next couple of weeks, the dessert menu is changing to warm the souls from the damn cold weather!!! I'm very excited!!! But this weeks Spiced apple crumble tartlet has proven successful and will be the first to pop onto the menu!! yay!!


Spiced apple crumble tartlet, poached rhubarb and ginger ice cream

I have been craving apple pie for some time now and this is the result of my crazy cravings! Buttery sweet pastry filled with granny smith apples cooked in cinnamon, ground ginger, pepper and thyme. Warm oat crumble to cover the top. Soft poached rhubarb and lighty infused ginger ice cream with crystallised ginger bits. It was so delicious I made a bigger tart for my family!!


It was amazing!!! I totally satisfied my cravings and took it to another level...I had a tea party..


Family tea party!!

Everyone brought a dish and we had Lychee port jelly, apricot jelly and green apple coconut jelly. We also had baked New York cheesecake, chocolate truffles, warm and gooey Clarins pot cheese, kabana, and 4 different types of teas. Chrysanthemum, Jasmine and Buddha's tea.


The last is called the Mate. It is a tea mixture infused with hot water and drunk from this particular container through a metal straw which has a filter on the end. It is a popular tea which is drunk in South America. It is slightly bitter.


I was craving scones and decided to make scones... with jam and cream..


..but it wasn't enough so I made chocolate brownie for the sweet bite, but staff at Coda got to eat the off cuts... and quince bread and butter pudding..hehe...


... then it became a CODA tea party!!! With mini lamb brioche burgers to balance all the sugar!!!

But what started all these cravings..was the day before ANZAC! Lest we forget! Since CODA has opened, I have always made ANZAC cookies throughout the year when I have spare time. They just taste so good and everyone loves them!!!

Everyone at CODA had the time to reflect on memories of our families, friends and people who fought for our country. We spent time to be happy to celebrate with a tea party and be happy on this present day.

But getting back to showing you CODA's desserts.. there is only one more which is the souffle.

This is the best souffle I have done in my career at CODA. I believe so anyway.. but if you have eaten at CODA, and think otherwise.. tell me..which was your favourite flavour?

April desserts and High tea at the Grand Hyatt Hotel!

Good morning everyone! I thought I can start the cravings early today by showing the newest flavours at CODA! The flavours have been played out as everyone's favourites and are sure nice warmers of the heart from the cold weather we are about to encounter. 


Medjool date soufflĂ© w drunken date ice cream and butterscotch vanilla sauce

Sticky date pudding has been on everyone's mind lately..especially mine hahaha *drool* so I thought, What better way to change it up a bit by creating it into a souffle. WINNER!! It is delicious!!! Too bad the texture is slightly airy than the slightly denser pudding, but you can't complain with the ice cream and sauce to go with it is AMAZING!!


Salted caramel fudge

These salted caramel fudge are a mouthful of sweetness w a slightly salted finish. Delicious for those who just want a bite with their coffee.


Poached quince bread and butter pudding w ginger ice cream

The quince is poached in port sugar syrup and layered between brioche soaked in a cinnamon ginger custard. The ice cream is lightly infused with fresh ginger and churned with crystallised ginger folded through. It is absolutely yummy!! If this doesn't warm you up..I'm not sure what will!

GRAND HYATT HIGH TEA

Blogging should not be done during the middle of the night because my tummy is groaning its complaints of hunger after seeing these pictures and reminiscing how they tasted last week. 3 other girlfriends and I decided to catch up over high tea and eat to our hearts desire.


We were offered to start off with, finger sandwiches filled with cured wagyu beef, smoked salmon and egg. The beef was to die for!!! Each filling was sandwiched between different bread, white, wholemeal and dark rye.


The cakes were beautiful. There were 5. Strawberry custard tart, baked cheesecake, green tea eclair, flourless chocolate and carrot cake. Yum!! I gotta say they were all my favourites but the cheesecake was outstanding.


The warm scones were perfect and round served with house made raspberry jam, apricot jam and cream. It was very delicious!! I wish I had the chance to eat them all but it was a struggle..can you believe..I eat everything!!!

Anyway..I better leave you to it, or else I'm going to start to chew my own arm off..I'm so hungry!!!

Dying4desserts in Vietnam, Da Lat

My parents and I travelled to Da Lat for 3 days. It was a 'country side' trip to get away from the city. January is considered Winter and it's coldest up in the hills where Da Lat is situated. It's warm during the day but cold (cool for us) during the night. We visited the Elephant waterfall, a temple at the waterfall, visited the night market opened nightly and of course the annual Flower festival.

But anyway, back to the food we ate.. we started off with Pho.





This tiny little place is only opened for breakfast and dinner. They have the freshest ingredients because most of the fruit and vegetables are grown locally by farmers. The photos are not very good, but you get the picture.

This restaurant is massive. There are 2 levels and they sell many dishes to eat with rice. There is a selection of salads, grilled meats, soups and stir fries. And the only dish which I see as worldly popular are hot chips. The food is delicious and all the locals and foreigners know this place. We did come again for dinner and had a hearty traditional Vietnamese meal. I was so hungry that no photos were taken. We had a tamarind eel hot pot, a lamb stir fry and artichoke tea. I forgot the name of this place but it is opposite the Blue moon hotel on bui thi xuan road.

My parents and I decided to eat at Banh Khoc Vung Tau Dalat. Most restaurants in Vietnam offer the same dishes but are made differently everywhere. This restaurant was delish and cheap at AU$2 a bowl or dish. 

The night market...

For dessert, I wanted to try something from the street vendors. It was a little different to what I've experienced. It was a pale green pandan crepe thing filled with shredded coconut, sesame seeds and sugar. It was good and warm for my tummy in the coldish weather we were experiencing.


It used to be illegal to sell street food and the vendors would get arrested and run away leaving all their equipment to be taken away by police. However, coming back here after 3 years, there are heaps of vendors that sell popular dishes like a selection of sea snails, chinese donuts, grilled meat skewers. And no body is running away!! Da lat is also known for their knit wear as it's mainly cooler weather up in the hills than down on flat ground.

Another Vietnamese desserts place is hidden. There is no signage on the doors at the front. It is more like gates that are opened slightly ajar. They have cold desserts which you may know as 3 colour drinks, but there is a wider selection of fruit and sweets which you can choose from and it is served with coconut milk and shaved ice. Hot desserts come in tiny bowls which you can easily scoff down a few.




I walked into a bakery where my parents and i have visited many years ago and it's great to see how they decorate their cakes.

Next door to the bakery, there is a Chinese Vietnamese restaurant which we decided to have breakfast before we left.

I've come to notice that most Vietnamese restaurants have multiple food stalls that surround the dining area. Unless they are a tiny restaurant, all food does not come out of the same kitchen. With an extensive menu and choices, they have many of the food trolleys that hold particular dishes.

Anyway, this is the last of my short trip to Da Lat, although not as informative as I would like...it can always be improved in the next post called ' Dying4desserts in Vietnam, Phu Quoc'.
